A descendant of oolong varieties from the Anxi Fujian, Tung Ting was brought to the eponymous central Taiwan mountain in the mid-1800s. Our Tung Ting is lightly oxidized, with brilliant whole green leaves. We use exclusively Winter harvested leaves for our Tung Ting, picked at 750 meters above sea level.
Natural floral aroma with hints of fresh orchids and gardenia in a pale green to light gold, crisp and smooth liquor.
Water Temperature:
195-200°, or when medium bubbles begin to rise and water becomes agitated.
Brewing Instructions:
Use 2 teaspoons (double for a medium sized pot). Rinse tea for 1 second. Discard rinse water. Steep for 2-3 minutes. May be infused multiple times.
