Harvested from Tung Ting, in central Taiwan, our Mi Xiang is a tea as rare as it is unusual. Gathered only after the leaves have been bitten by leaf hoppers, a type of cicada, the tea exhibits an intoxicating sweetness and honey like aroma that comes from compounds released by the plant in response to the cicadas? bite.
Each year, only a few kilos of this tea is produced, its availability determined as much by nature?s course as by the determination of tea connoisseurs who seek out this wonderful and rare tea.
Water Temperature:
195-200°, or when medium bubbles begin to rise and water becomes agitated.
Brewing Instructions:
Use 2 teaspoons (double for a medium sized pot). Rinse tea for 1 second. Discard rinse water. Steep for 2-3 minutes. May be infused multiple times.
